I hereby solemny swear; from next year onwards I will be posting only savory christmas dishes. And I also solemny swear that I will be doing nothing other than eating salads all year long. Just 365 days of eating greens… Seems like a brilliant plan. I might actually lose some weight in the process, even though that seems to be sort of a lost cause anyway. I will only do photoshoots with savory things. Without cheese and without anything else that might be considered hazardous for your waistline… Hahaha… Ok, dream on babe…. Anyway I am completely going off the topic of the day because that is – how could it be anything different? – sweets again. Cookies this time!
Baking cookies is of course not exactly a difficult task, or at least not with these simple biscuits but it is fun to do and for these ones it’s more about the decoration than anything else really. If you have kids I can imagine it would be even more fun playing around with all sorts of different cutters. And it takes just a few minutes to come up with these pretty christmas cookies. I do have to confess that Caroline made these and not me, in case you were thinking I have anything to do with making them look so pretty.
I am very good in eating them though. Does that count for anything?

This recipes makes about 350 gram of standard cookie dough (pâte sablée) For a christmas cookie flavor you could of course add a bit of cinnamon or other spices to the dough. Keep in mind that the cookies might end up a bit darker if you do.

Ingredients
- 100 gram soft butter
- 75 gram icing sugar
- 1 egg yolk
- 1/2 tsp vanilla extract
- 150 gram flour
For the glaze
- icing sugar
- lemon juice/water
Place butter and icing sugar together in a mixing bowl and mix until light and creamy. Add the eggyolk and the vanilla to it and mix for another 10 seconds. Sieve the flour and mix with the butter on low. Turn the dough out onto a working bench dusted with flour and form into a ball. Wrap in clingfilm and put into the fridge for at least 2 hours.
Preheat the oven to 170 C
To make the cookies, roll out the dough to the desired thickness and use various cutters to make the cookies. Put them on a baking tray and bake the cookies in the oven until golden. This will take approx 10-15 minutes. Leave to cool completely before decorating
Decorating can be done any way you like. Be creative. To make the glaze add the icing sugar with just a tiny amount of water together and mix til it becomes smooth and glossy but not too runny. Remember you have to be able to pipe it onto the cookies without it dripping down straight away. Too thick is also not good as that will just never get a smooth surface.
For some added taste you can use lime or lemon instead of water to the glaze.
