Weight Watchers Breakfast Crustless Frittata
Ingredients
1 cup peppers and onions vegetable mix 0 Points
1 cup cooked mushroom pieces 0 Points
1 cup cooked spinach 0 Points
1 cup broccoli slaw 0 Points
8 eggs 0 Points
1/4 second spray Pam Cooking Spray, No-Stick, Olive Oil 0 Points
1 tsp black pepper 0 Points
Instructions
1. Spray a pan with Pam cooking spray no-stick olive oil
2. Sautee Onions, peppers, mushrooms, spinach and broccoli slaw till browned.
3. Transfer mixture to a pie pan
4. Add 8 beaten eggs on top and bake for twenty minutes at 350
5. Add pepper to taste
Serves four – o points per serving

These Petite French Toast made with mini flatbreads are simple to make, and the kids can have fun dolloping on their favorite toppings – maple syrup, jam or jelly, fresh berries, chopped cling peaches, or Nutella.
“This breakfast is not only wholesome – made with warmed bread, fresh eggs, milk and a healthy dose of fruit – but it’s also lots of fun for kids to assemble themselves,” said Chef Demetrios Haralambatos, executive chef at Kontos Foods. Petite French Toast
INGREDIENTS: (makes 20 pieces)
20 Pieces Kontos co*cktail Flatbreads
1 cup Half-and-Half (or Whole Milk)
4 Fresh Eggs
2 tablespoons Vanilla Extract
½ teaspoon Ground Cinnamon
2 tablespoons Butter
2 tablespoons Vegetable Oil or Extra Virgin Olive Oil
DIRECTIONS:
Break eggs and combine with half-and-half, ground cinnamon
and vanilla extract in a bowl and whisk vigorously. Pour mixture into flat-bottomed baking dish or pie plate.
Place 20 pieces of co*cktail Flatbread into mixture and allow to sit for at least 10 minutes
(5 minutes on each side).
• Heat flat-bottomed frying pan to a medium heat, and add butter and vegetable oil.
Pan-fry co*cktail Flatbreads for about 3 minutes on each side
(or until both sides have nice golden-brown markings).
Set aside on paper towel to blot any excess oil and let cool.
6.Serve with assorted toppings, and have fun personalizing each Petite French Toast.
Nutella & Fresh Fruit Topping
INGREDIENTS: (for 20 pieces)
½ cup Nutella
½ cup Mascarpone Cheese
½ cup Blueberries
½ cup Raspberries
1 cup Strawberries, sliced in two
1 bunch of fresh Mint
DIRECTIONS:
Spread a generous layer of Nutella and a dollop of mascarpone on each co*cktail Flatbread.
Top each with fresh berries and a mint leaf.
Egg Salad Topping
INGREDIENTS: (for 20 pieces)
8 Large Hard-Cooked Eggs, shelled & chopped whole, medium
½ cup Olive Oil Mayonnaise
1 ½ teaspoons White Wine Vinegar
1 ½ teaspoons Dijon Mustard
½ teaspoon Tabasco Sauce
¼ cup Cheddar Cheese, grated
Salt to Taste
DIRECTIONS:
Mix above ingredients (except garnish items) together in bowl.
Apply mixture to 20 French-Toast co*cktail Flatbreads
Garnish each with sprig of cilantro and serve on platter or wooden cutting board.
