25 Healthy Zoodle (Zucchini Noodle) Recipes (1)

Zucchini noodles, also known as zoodles, are a great way to get your pasta fix without all the carbs. The easiest way to make zucchini noodles is with a spiralizer; my spiralizer comes with different blades to make zoodles that are thin, medium and thick. Zoodles are best when raw or just barely cooked; if you cook them too long they might get mushy.

If you don’t have a spiralizer and don’t care to purchase one, you can use a vegetable peeler to shave long strands off whole zucchini to make your own “noodles”.

I’ve collected an assortment of quick and easy zucchini noodle recipes – there’s everything from shrimp dishes to meal prep ideas and more! So many zoodle recipes to try, so little time! FAQs

How do you cook zoodles so they're not soggy? ›

Tip 5: Don't over-cook your noodles

To avoid soggy and limp noodles, I recommend cooking for only 3-5 minutes (5 if you're cooking more than 1-2 spiralized zucchinis) and tossing frequently. You want a slightly al dente noodle.

How healthy are zucchini noodles? ›

Zucchini is low in fat, sugar, and calories, and high in vitamin C and fiber, making it a great substitute for traditional pasta noodles. Fiber helps to regulate bowels and maintain good digestive health, and vitamin C acts as an antioxidant to protect cells.

What is healthier spaghetti squash or zucchini noodles? ›

A look into essential Vitamins & Minerals, shows that Zucchini Pasta outdoes Spaghetti Squash on every one, except for Niacin, Pantothenic Acid, Calcium and Selenium. Information found from SELF's Nutrition Data calculator.

How do you get excess water out of zoodles? ›

Sprinkle salt on the vegetables and let them sit overnight (or at least 6-8 hours), if possible. Remove the salt and the excess water by flushing in running water, then draining well and pressing between layers of paper towels before cooking them or by spinning the vegetables in a salad spinner.

How do you keep zucchini from getting soggy when sauteed? ›

If you've got the time, try salting and draining your zucchini. This method involves liberally salting your sliced zucchini and allowing it to set in a colander (over a bowl) for at least 30 minutes, up to an hour, before patting dry with paper towels or a tea towel.

Should you salt zoodles before cooking? ›

Add zucchini noodles. Toss with tongs and let the zucchini cook for just a minute or two. Remove from heat and add to sauce or add some salt and eat as is. Note: Don't salt the zucchini before you saute it; the noodles will release more water and they'll end up limp.

Do zucchini noodles have a lot of carbs? ›

Zucchini Noodles (1 cup, sliced) contains 3.5g total carbs, 2.4g net carbs, 0.4g fat, 1.4g protein, and 19 calories.

Are zucchini noodles good for diabetics? ›

It is possible for diabetics to enjoy their favorite feel-good foods like pasta (and fries) we simply have to get a little more creative. The foods you eat should taste great, make you happy, and keep your blood sugar stable. Zucchini “zoodles” definitely fit that bill!

Which squash is the healthiest? ›

Butternut Squash: is packed with vitamin C and beta carotene, both of which act as antioxidants in the body and protect the cells from damage. Spaghetti Squash: also makes an excellent alternative to pasta due to its spaghetti-like strands.

Why do you soak zucchini in salt water? ›

Salt causes zucchini rounds to release excess water. This important extra step helps the zucchini to sauté rather than stew in its own juices.

Do you cook zoodles or eat them raw? ›

One of the most beautiful things about spiralizing is that it makes raw veggies into edible pasta! Save yourself the headache of cooking and toss them in a dressing or sauce raw! One of my favorite ways to eat zucchini noodles raw is in a pesto. The pesto is creamy, flavorful, and coats the zucchini well.

Can I freeze zucchini noodles? ›

Like most forms of summer squash, you can keep zucchini noodles in your freezer for up to 12 months. However, they may become less flavorful over time, so try to eat them as soon as possible. Boil your zoodles to thaw them. When you're ready to reheat your zoodles, fill a pot with water and bring it to a boil.

How do you make zucchini less wet? ›

Slice and salt zucchini in advance of cooking to draw out some of the vegetable's excess moisture (while also seasoning it more thoroughly). To do this, cut up a pound of zucchini and toss it with ½ teaspoon of table salt. Let it drain in a colander for about 30 minutes before patting it dry and cooking it.
