Balsamic Beef Stew

This is one of my favourite meals to make in the colder months. Totally effortless, it can be cookedon the stove, in a slow cooker or even an Instant Pot.

Simple ingredients that don't compromise on flavour. It's a perfect meal for the whole family to dig in and enjoy.

Best Cut of Beef for Stews/Casseroles

For this you can either use lean stewing beef (diced beef) or buy a larger piece of beef like chuck or brisket works well. Any cut that is great for slow cooking, stews etc as you want the meet to be melt in the mouth tender.

Slow Cooker Versus Pressure Cooking

Pretty much any recipe you cook in a slow cooker can also be cooked in a pressure cooker. It's usually the same measurement of ingredients the only difference being the cooking time. Slow cookers involved cooking for several hours usually until the meats is incredibly tender and melts in your mouth, A pressure cooker achieves the same, but cuts the cooking time down incredibly.

The beauty of a slow cooker is that you can add all the ingredients at the start of the day and then come dinner time it's cooked and ready - yummy!!

Perfect dish for a busy day as you can prep it all in the morning.

Never heard of a Pressure Cooker (Instant Pot)?- you are seriously missing out. It is the best kitchen gadget I have purchased. I love this thing so much, that I almost use it EVERY.SINGLE.DAY.

A 7in1 cooker, and it slow cooks, pressure cooks, sautes, has settings for soup, chilli, rice, porridge and even makes yoghurt (I haven’t tried that yet).

Manual high pressure is my choice of setting the majority of the time, picking my own timings depending on what it is I am making.

Best Balsamic Vinegar for cooking

You want to use a good quality balsamic vinegar for this recipe, otherwise the taste will very overpowering. One that has been aged for several years and has Aceto BalsamicoTradizionale di Modena printed on the label.

Also when added the brown sugar, ensure you are using accurate measuring spoons. Sugar should always be measured loose not packed and as a level tablespoon not heaped otherwise this may end up too sweet. The sugar just helps to balance the flavours and give a beautifully glossy sauce.

Sides for Stews or Casseroles

My favourite things to serve this with are some roasted Yukon Gold potatoes. These type of potatoes have an amazing buttery flavour and are perfect roasted like this Crushed Roasted Potatoes or if mash is more your thing, you might like one of these options:

  • Mashed Potatoes
  • Sweet Potato Mash
  • Sour Cream Spring Onion Cauliflower Mash

or some other potato options:

  • Garlic and Herb Potatoes
  • Roasted Potatoes
  • Hasselback Potatoes
  • Garlic Herb Potato Wedges

Vegetable Sides for Stews and Casseroles

Want to include additional vegetables to this casserole, there are so many different options. Some of my favourites are:

  • Cabbage
  • Sauteed Garlic Shredded Brussel Sprouts
  • Broccoli
  • Roasted French Beans
  • Roasted Butternut Squash and Brussel Sprouts

Can this Balsamic Braised Beef be frozen?

This is one of my go to dishes for batch cooking and is the perfect dish for freezing.

I always tub up in handy portions, then just take one out as needed, defrost in the fridge and then reheat in a pan or micrwave and serve up with some sides of my choice.

FAQs

How long does it take to cook in Instant Pot vs slow cooker? ›

Cooking meat in the slow cooker usually takes 6 to 8 hours, but it will only take about 30 minutes in the Instant Pot.

What is the braise setting on Instant Pot? ›

The Braise function on the Instant Pot is one of its 5-in-1 functionalities. It allows you to cook food slowly in a small amount of liquid, resulting in tender and flavorful meat. To use this function, simply select it on your Instant Pot and adjust the temperature and time according to your recipe's instructions.

How long to braise beef? ›

It will take about 1 1/2 to 3 hours to become fork-tender. As soon as it's fork-tender, it's done. Cooking any longer will dry out the meat. With braising, just a little effort yields amazing results.

Is roast better in CrockPot or Instant Pot? ›

Some people prefer a roast that has more substance, so if you do, the Instant Pot is the winner. I have tried cooking a roast for up to 120 minutes in the Instant Pot and the texture still didn't match a slow cooker, but every 10 minutes of added pressure cooking will definitely make the meat more tender.

What is healthier, a slow cooker or an Instant Pot? ›

When it comes to preserving nutrients, the Instant Pot's high-pressure cooking generally wins the battle. If you're looking for quick, healthy meals with minimal nutrient loss, the Instant Pot is your go-to. For rich, complex flavors and fall-off-the-bone tenderness, the slow cooker takes the crown.

Do I vent my Instant Pot when slow cooking? ›

Another tip, taken from an Instant Pot Facebook group, is to open the valve all the way on your Instant Pot lid when slow cooking. This allows some moisture and steam to release and keeps the Instant Pot from overcooking your slow cooker recipes.

Do I seal the Instant Pot when slow cooking? ›

When slow cooking in the Instant Pot, you can cover the pot using a tempered glass lid or the regular Instant Pot lid. If you are using the Instant Pot lid, you need to move the steam release valve to the "venting" position.

Can I leave my Instant Pot on slow cook unattended? ›

You can leave your Instant Pot unattended when using it to slow-cook food such as chicken bone broth.

Why isn't my braised beef tender? ›

To keep meat tender yet safe during braising, you must maintain an important balance. Cooking temperatures must be high enough to kill microorganisms, yet not so high that the meat toughens. Use a thermometer to check the temperature of the surrounding stock and keep it at a simmer of 180 F/82 C-190 °F/88 °C.

Can you braise beef too long? ›

The Takeaways. Yes, you can undercook and overcook a braise.

Why is my braised beef chewy? ›

Lean cuts of beef without a lot of connective tissue and not much fat marbling like sirloin tip or top round tend to get tough and chewy if cooked in stews as they are best (to me) if roasted rare or medium rare and sliced across the grain thinly.

What is the advantage of Instant Pot over slow cooker? ›

Time: The pressure cooking function of the Instant Pot allows it to cook food much faster than a slow cooker. For instance, a pork shoulder in a slow cooker takes at least 6 hours on high to become shreddable. In an Instant Pot, you can have pulled pork in an hour.

Can an Instant Pot replace a slow cooker? ›

Touted as the do-it-all appliance for good reason, an Instant Pot is a multi-function pressure cooker that easily doubles as a slow cooker. The difference between pressure cooking and slow cooking is substantial, so we love that one appliance can do both, along with a slew of other cooking methods.

Does Instant Pot reduce cooking time? ›

Does The Instant Pot Really Save Time? According to my research, pressure cooking can cook most foods in 1/3 less time than other cooking methods and even up to 10 times faster! The steam pressure inside the pressure cooker cooks food much, much more rapidly than just boiling or baking food.

Does an Instant Pot use more electricity than a slow cooker? ›

When comparing appliances, you'll find that the pressure cooker beats even the most energy-efficient slow cooker in terms of using less power and adding less heat into your home. Pressure cookers consume much less power than a standard electric oven, which uses around 2,000 watts of electricity on medium heat.
