To be honest, I dont know where I learned how to make Soft Tofu with Silky Egg Sauce because I have never seen this dish at restaurants, but I’ve been making it for the past 5 years, and it is still one of my favorites. The tofu soaks in all the ultra-smooth gravy sauce, and the peas and corn add sweetness and texture to the dish. The egg makes the gravy extra silky and also adds richness and depth to the sauce as well. Whenever I make Soft Tofu with Silky Egg Sauce, I prepare enough rice because I know me and my fiance I will always fight for the last bite!

FAQs

Are egg tofu and silken tofu the same? ›

In general, egg tofu is slightly more firm than silken tofu, though they still have a similar mouthfeel. As a result, it's somewhat easier to handle and use in pan-fried dishes, while silken tofu is very likely to fall apart before getting any kind of crispy char.

What is the difference between silk and soft tofu? ›

Silken tofu also called soft, silk, or Japanese-style tofu has a softer consistency than regular tofu and will fall apart if not handled carefully. You may notice that silken tofu (soft tofu), unlike regular tofu, is sometimes packaged in aseptic boxes that do not require refrigeration.

How do you cook tofu so it is soft? ›

Place a steaming rack into a wide, shallow pan with a lid, and add about half an inch of water. Place the plate of tofu on the steaming rack. Bring the water up to a gentle simmer over medium-high heat, cover, and allow to steam for 5 minutes. Keep an eye on the pot and add extra water if needed.

How do you know when soft tofu is cooked? ›

If you're cooking slices or cubes, cut the tofu into slices, layer them between paper towels and weigh down the individual slices. The finished tofu should be spongy yet dry (you'll need to weigh it down for 30 minutes to 2 hours).
