INGREDIENTS:
- 1 pound lean ground beef, browned
- 1 onion, diced
- 2 bell peppers, diced
- 1 28 oz can diced tomatoes
- 2 Tbsp garlic, minced
- 8 cups beef stock (We make stock from scratch as much as possible.)
- 2 Tbsp taco seasoning (This homemade taco seasoning is easy peasy and delicious!)
- 1 250g pkg cream cheese, room temperature
- fresh cilantro, for garnish

Directions:
1. Prepare and dice all of the vegetables.

2. In a large stock pot on medium heat, brown the ground beef. Add onion and garlic and cook until the onion is opaque.

3. Add the bell pepper, tomatoes, beef broth, and taco seasoning. Simmer for 10 minutes. Add the cream cheese and cook for an additional 10 minutes or until all of the cheese is well incorporated.
4. Top with fresh cilantro before serving.
Serves 6, with about 5 net carbsper serving. It’s even better the next day!

- Instead of beef stock, use bone broth or chicken broth.
- Substitute ground turkey or ground chickenfor the ground beef.
- Green chilies, salsa, and chili powder all add a little bit more heat.
- For even more creaminess, add a splash or two of heavy cream.
- Lime juice adds a wonderful tangy flavor to this soup.
- Sliced green onionsmake another great topping.
