No sugar, no flour and yet packed with protein and fiber? Those things don’t sound likely in a soft, warm pancake… but, that’s exactly what this no-fuss easy healthy pancake recipe made with oatmeal delivers. Shoot, it’s even gluten-free. All you need to make these yummy healthy pancakes is a blender, a flat griddle or pan, the four simple ingredients shown below and a dash of cinnamon (OK, 5 ingredients!).

This recipe may sound a little strange, but give it a try. We defy any mix to match the texture, flavor, consistency and nutritional value of this perfectly balanced pancake. You will think that you’re eating dessert cakes and not healthy pancakes!

Ingredients for Healthy Pancakes

Here’s a quick & easy pancake mix recipe that’s goes straight from blender to griddle for super healthy pancakes. This recipe serves about two adults. Also, it’s a great way to use up leftover sweet potatoes from dinner.

1 Cup Oatmeal, we use Old-fashioned Oats

1 Cup Cottage Cheese, we use small curd

1/2 Cup Cooked Sweet Potato

2 Eggs

Dash of Cinnamon

Instructions for Healthy Pancakes

    1) Place all ingredients into a blender – be sure to put the eggs into the blender first so that the blender starts and runs smoothly (not last like I did in this picture!).

    2) Blend until smooth (about a minute or less).

    3) Pour onto a pre-heated griddle (lightly sprayed or greased, we use coconut oil).

    4) Flip when bubbles begin to rise (and bottom is lightly browned).

    5) Serve with fresh fruit, nuts and/or syrup as desired.

Top these pancakes with some fruits and nuts for a great start to the day. We added chopped apples, pecans and bananas today. We picked these Granny Smith apples back in September and kept them in the fridge after we tired of making apple pies and sauces. They’re now slightly softer and sweeter than they were in the fall, which makes them even better for eating with a hot pancake than when they were tart and crisp fresh from the tree.
