I'm not usually a fan of fruit-flavored desserts unless it's apple pie (do Swedish Fish count?), but I have started falling in love with lemon-flavored desserts thanks to these lemon bars and today's easy lemon cookies with lemon glaze.

The secret is using a lemon cake mix and not much else. Seriously. These cookies require a total of 6 ingredients and that includes the aforementioned cake mix.

Easy Lemon Cookies with Lemon Glaze

Cook Time: 12 minutes

Total Time: 22 minutes

These easy lemon cookies with lemon glaze require only 6 ingredients and very little time. Sure to become a family favorite!

Ingredients

Cookies

  • 1 box lemon cake mix
  • ⅓ cup canola oil
  • 2 eggs
  • 1 T lemon juice

Glaze

  • 1 cup confectioner's sugar
  • 1 T lemon juice (or more depending on preference)
  • 1 teaspoon lemon zest

Instructions

    Cookies

    1. Preheat oven to 350 degrees.
    2. Mix cake mix, oil, eggs and lemon juice together. Note: Dough will be thick.
    3. Drop heaping tablespoons of dough 2 inches apart on ungreased cookie sheet.
    4. Baked for 12 to 14 minutes or until edges barely turn golden brown. Cool 2 to 3 minutes on pan before removing to wire rack to cool completely.

    Glaze

    1. Whisk together confectioner's sugar, lemon juice and lemon zest in a small bowl. Drizzle over warm cookies or dip tops of cookies in glaze as shown in photos.

          I haven’t made these in many years and I never thought about icing them(!). What a great idea! My mom discovered cake mix cookies back in the late 70’s -particularly these lemon ones that were called “Lemon Whippersnappers” lol-and used to make them minus the icing! I
          Love the the idea of icing them as you suggest and the addition of lemon zest and lemon juice would make them taste more homemade! Thank you!
