    I just made this last night!

    Despite the coconut milk (full fat) I still felt like it needed a little more fat/cream when it was done. So I added about 4oz of cream cheese and stirred it in until it melted. It added just the kick I wanted. If you can afford the calories I recommend it!

    Thanks for a wonderful recipe, I’ll be making this a lot. It’s very flavorful and hearty!

    I made this for dinner tonight and it is fabulous! My little guy is allergic to dairy so the coconut milk is ideal. My husband who is not a soup fan said to me “hey this is pretty good!” I found this too late to make it in the crock pot, but it turned out delish on the stove top too!

    Thank you for posting this recipe. I used a can of rotel like tomatoes and chilies which I liked it spiced it up. Also added fresh zucchini and carrots- which was wonderful! I used the light coconut milk, it probably would have tasted a bit better with the full fat but it was pretty good without it. Thanks again!

    This was just ok for me. Not bad, just not great. I could definitely taste the coconut (I am a huge fan, but just didn’t care for it in this dish). I would use heavy cream instead and add fresh parm.

    Hi Bonny – Tomato sauce (http://www.hunts.com/products/tomatoes/tomato-sauce) is a common staple here. It’s just basically tomatoes cooked down to a smooth liquid. The puree would be a little thicker – you might need to adjust the liquid. Good Luck!

    I really loved this dish. Its healthy and taste great. I did have a little problem with trying to mask the coconut milk taste. I followed the original recipe and only added these extras-one extra can diced tomatoes, another can of chicken broth, spinach, parsley, and bay leaves-when I could still taste the coconut milk. And this is very minor but I was curious how your soups color was so dark? After I added in the coconut milk my soup was half as dark as yours. Your soup looks like it doesn’t have any coconut milk in it at all. The color doesn’t matter at all but I was just wondering how your soup turned out much darker and richer looking? Oh I almost forgot. I also had to use the hand mixer on the broth because the coconut milk was grainy and was leaving a grainy film in the soup and all around the crock pot.

    I’ve made this several times already and it is delicious. The first time, I made it using the full fat version of the coconut milk, as stated in the recipe. The second time, I used the low fat version. It was still delicious but not as creamy. Now, I double the recipe and use one can of low fat and I can of the full fat. Anyway I make it, it’s great. I add 1/2 cup of orzo into it toward the end.

    I could definately taste the coconut milk. I followed the recipe like it says but ended up adding a whole lot of other stuff to try to mask it but nothing worked. I wonder if I got a weird brand or something? Anyway I definately won’t be using coconut milk for any future recipes. If anyone finds an alternative that would be great. I wish I could say the recipe was good other than that but I just couldn’t get past the coconut taste :/

    I used fat free half and half and fat free milk. It tastes delicious. It wasn’t as creamy as I had hoped. I used a total of 14 oz as per the coconut milk. I wonder if I should have used a little less. I added a little whipping cream at the end to thicken it up. It helped a little.

    i didn’t see in the directions what to do with the onion and garlic. Should it be added in the beginning and does it need to be sautéed first to soften? Also is it correct at 2 Tb Italian seasoning or should it be 2 tsp? Seems a little much at 2 Tb.

    I made this once before using leftover pork roast instead of the chicken, it was very good! Today I am making it with chicken-I boiled a whole one instead of using breasts. I used a jar of my favorite pasta sauce in place of the diced tomatoes, tomato sauce and seasoning! So easy!

    Made this last night for dinner since hubby and I are doing Whole30. Delicious! Even our 3 year old daughter cleaned her bowl! Only change I made was to use boneless skinless chicken thighs instead of breasts. They shred so easily and don’t dry out in the crock pot. To those who are complaining of the strong coconut taste…any chance they are using sweetened coconut milk instead of unsweetened?? I thought the coconut milk added the perfect amount of creaminess, but didn’t notice any taste other than Italian yumminess! Thanks for a healthy soup recipe that also tastes like comfort food!

    Delicious!! I added some fresh Thyme, marjoram and bay leaves. Some crushed red pepper and a 2nd can of diced tomatoes. After removing the chicken to shred I pureed it. Many compliments!!!!

    I’m on a keto diet and I wish I would have calculated the carbs first. Came out to over 40 carbs if it’s divided by 6 servings. That’s more than I can have in a whole day. So it’s not very low carb. Gonna save for a cheat meal in a couple weeks.Always need to check paleo recipes cause they aren’t always low on carbs. It is delicious though.

    This was very good. Loved it. I’ve never used coconut milk before, so I was a little leary. It was great. At my grocery store, they only had coconut milk in the quart size and 15 oz sweet coconut cream, I chose the milk and just measured it. I did add just a little bid of tiny star macaroni
    noodles. I also made it with 2 very large chicken breast, bone in and just de-boned them. Also, I think that will add just a little more liquid next time. My husband is very picking and he loved it.

    We LOVE this soup and I make it often in the colder winter months. I normally follow the recipe but one day was out of Italian seasoning so I used Fines Herbes it was just as delish with a slightly different flavor.
